One of the specialty food is the Lamb Solano, which is basically a Persian lamb stew. The lamb is slowly cooked over low flames until it is tender and the meat literally drops off the bone. I believe the correct name this dish in Yemen is called Lamb Fahsa. This dish can be served with flatbread or their standard flatbread.
